Strict and meticulous selection of grapes in the vineyard. Manual harvest in boxes of 15 kg. Manual selection table. Subsequent soft destemming. Fermentation in small stainless steel tanks. Extraction of phenolic compounds by pumping over and "pigeage". Maceration adjusted to the potential of each plot. Fermentation and maceration with the skins between 8 and 10 days.
WINE PROFILE
Assembly of three autochthonous varieties from three unique farms.
TASTING NOTES
Cherry red color with violet on the edge. On the nose, red fruits with floral and balsamic nuances, a mineral touch surrounded by aromatic forest notes. (Dried herb, rosemary, carob, vineyard peach) -
Aromatically very intense and complex. Notes of red fruits (currants and raspberries) come out, surrounded by a touch of minty and the mineral point conferred by the terroir.
On the palate, it is smooth and elegant, with an amplitude structured by a very fine tannin, which gives it a sweet touch. The acidity point gives it length and freshness with a very persistent finish. Wide and smooth, with a very fine tannin with a sweet touch, the acidity point makes it fresh and long-lasting with a very persistent sweet finish.
RECOMMENDATIONS
Due to its good aging potential, it is recommended to decant it to enjoy its complexity.
